Ingredients
3 large eggs, separated
100g granulated sugar (1/2 cup)
250g mascarpone cheese (1 cup)
200ml strong brewed coffee or espresso, cooled (3/4 cup + 1 tbsp)
2 tablespoons coffee liqueur (optional)
250g savoiardi (ladyfinger) biscuits (about 30 pieces)
2 tablespoons unsweetened cocoa powder
Dark chocolate shavings (optional, for garnish)
How Do You Cook It?
Prepare the coffee: Brew the coffee or espresso and let it cool to room temperature. Add coffee liqueur if using, and set aside.
Make the mascarpone mixture: In a bowl, beat the egg yolks with the sugar using an electric mixer until the mixture is thick and pale. This should take about 3-5 minutes. Gently fold in the mascarpone cheese until smooth.
Whip the egg whites: In a separate clean bowl, whisk the egg whites until stiff peaks form. Carefully fold the egg whites into the mascarpone mixture using a spatula until combined and smooth.
Assemble the tiramisu: Quickly dip each ladyfinger into the coffee mixture, ensuring they are soaked but not too soggy. Line the bottom of a 20cm (8-inch) square dish with a layer of coffee-dipped ladyfingers.
Layer the dessert: Spread half of the mascarpone mixture over the ladyfingers. Repeat with another layer of coffee-dipped ladyfingers and the remaining mascarpone mixture.
Chill the dessert: Cover the dish with cling film and refrigerate for at least 4 hours, or overnight, allowing the flavours to develop and the dessert to set.
Finish and serve: Before serving, dust the top generously with cocoa powder and garnish with dark chocolate shavings if desired. Slice and serve chilled., fresh coriander, and a squeeze of lime. Serve with a side of consommé for dipping.
Tips & Tricks
Ensure the coffee is fully cooled before dipping the ladyfingers to prevent them from becoming too soft.
For a non-alcoholic version, simply omit the coffee liqueur.
