Ingredients
For the Meatloaf:
500g ground beef (1 lb)
250g ground pork (1/2 lb)
1 large onion, finely chopped
2 cloves garlic, minced
1 cup breadcrumbs (120g)
1/2 cup milk (120ml)
2 large eggs
1 tablespoon Worcestershire sauce
1 teaspoon dried thyme
Salt and pepper, to taste
1 tablespoon olive oil
For the Glaze:
1/4 cup ketchup (60ml)
1 tablespoon brown sugar
1 tablespoon apple cider vinegar
How Do You Cook It?
Prepare the mixture: Preheat your oven to 180°C (350°F). Heat olive oil in a skillet over medium heat. Add chopped onion and garlic, sautéing until softened. Remove from heat and let cool slightly.
Mix ingredients: In a large mixing bowl, combine the ground beef, ground pork, sautéed onions and garlic, breadcrumbs, milk, eggs, Worcestershire sauce, thyme, salt, and pepper. Mix until just combined, ensuring not to overwork the meat.
Shape the meatloaf: Transfer the mixture to a greased baking dish or line it with parchment paper. Shape into a loaf form, about 5 inches wide and 2 inches high.
Make the glaze: In a small bowl, mix ketchup, brown sugar, and apple cider vinegar. Spread half of this glaze evenly over the top of the meatloaf.
Bake: Place the meatloaf in the oven and bake for 45 minutes. Remove from oven, spread the remaining glaze over the top, and return to the oven for an additional 15 minutes, or until the internal temperature reaches 70°C (160°F).
Rest and serve: Let the meatloaf rest for 10 minutes before slicing and serving. This helps it hold together better.

For a juicier beef and pork meatloaf, do not pack the meat mixture too tightly when shaping it.
Feel free to substitute ground turkey or chicken for a lighter version.
