Ingredients

For the Choux Pastry:


125ml water (1/2 cup)

125ml milk (1/2 cup)

100g unsalted butter (7 tbsp)

1 tablespoon sugar

1/4 teaspoon salt

150g all-purpose flour (1 cup)

4 large eggs


For the Filling:


500ml heavy cream (2 cups)

2 tablespoons icing sugar (powdered sugar)

1 teaspoon vanilla extract

How Do You Cook It?

Preheat the oven: Set your oven to 220°C (425°F). Line a baking sheet with parchment paper.


Make the choux pastry: In a saucepan, combine water, milk, butter, sugar, and salt. Bring to a boil over medium heat. Remove from the heat, add flour all at once, and stir vigorously until the mixture forms a ball and pulls away from the sides.


Add the eggs: Transfer the dough to a mixing bowl and let it cool for a few minutes. Add eggs one at a time, beating well after each addition until smooth and glossy.


Shape the cream puffs: Spoon or pipe small mounds of dough onto the prepared baking sheet, leaving space between each. Smooth any peaks with a wet fingertip.


Bake the pastries: Bake at 220°C (425°F) for 10 minutes. Reduce the oven temperature to 190°C (375°F) and continue baking for 15-20 minutes, until golden brown. Pierce each puff with a skewer to release steam and let cool on a wire rack.


Prepare the filling: Whip the heavy cream, icing sugar, and vanilla extract together until stiff peaks form.


Assemble the cream puffs: Once the puffs are cool, slice them in half and fill with the whipped cream using a piping bag or spoon.


Serve: Dust with additional icing sugar if desired and serve immediately.

Make sure to add eggs to the dough after it cools slightly to prevent cooking them.
