Ingredients
500 g (1 lb) ground beef (80% lean, 20% fat)
1 small shallot or onion, finely chopped
5 large eggs
1/4 cup (60 ml) breadcrumbs
1 tbsp Worcestershire sauce
1 tsp salt
1/2 tsp ground black pepper
2 large, red onions, thinly sliced (for caramelised onions)
2 tbsp butter or olive oil (for caramelised onions)
2 tbsp brown sugar (for caramelised onions)
4 brioche buns, sliced
4 slices of American cheese
2 avocados, sliced
Your favourite condiments for serving (I recommend mayonnaise and spicy burger sauce)
How Do You Cook It?
Caramelise the red onions: In a large skillet, heat the butter or olive oil over low heat. Add the thinly sliced red onions and cook, stirring occasionally, until they become soft and start to caramelise, about 10-15 minutes. Add the brown sugar and continue to cook for another 5 minutes. Set aside.
Mix the burger ingredients: In a large bowl, combine the ground beef, finely chopped onion, 1 egg, breadcrumbs, Worcestershire sauce, salt, and pepper. Mix gently with your hands until just combined.
Form patties: Divide the mixture into 4 equal portions and shape them into patties about 2 cm (3/4 inch) thick. Make a small indentation in the centre of each patty with your thumb to prevent them from puffing up during cooking.
Preheat the grill or pan: Preheat your grill (preferred) or a large frying pan to medium-high heat. Lightly oil the grates or pan.
Cook the burgers: Place the patties on the grill or in the pan. Cook for about 4-5 minutes on each side for medium-rare, or until they reach your desired level of doneness. If using cheese, place a slice on each patty during the last minute of cooking and cover to melt.
Fry the eggs: In a separate pan, fry the 4 remaining eggs to your preferred level of doneness. You can keep the yolk runny or cook it through.
Toast the buns with cheese: While the burgers are cooking, place one cheese slice on top of each brioche bun and lightly toast them on the grill.
Assemble the gourmet burgers: Place each patty on a toasted cheesy brioche bun, top with caramelised onions, avocado slices, and a fried egg. Add your favourite condiments.
Tips & Tricks
Burger patty: Handle the meat mixture gently to keep the burgers tender.
Perfect caramelisation: Cook the onions slowly and patiently for the best caramelisation.
Serving Suggestions
Classic sides: Serve with chips, sweet potato fries, a fresh garden salad, or roasted vegetables.
Toppings: Experiment with additional toppings like sautéed mushrooms, bacon, or spicy jalapeños for added flavour.
Freezing and Reheating
Freezing: Shape the patties (before cooking) and place them on a baking sheet lined with parchment paper. Freeze until solid, then transfer to a freezer-safe bag or container. Can be frozen for up to 3 months.
Reheating: Thaw the patties overnight in the refrigerator. Cook on the grill or in a pan over medium heat until cooked through.
